Hinterstoder is great for people searching for less crowded slopes. They have a few good bar options on the slopes as well, so that's a bonus. Probably good for a few days up to a week stay, as there aren't as many slopes. The village down the hill is tiny though, so there aren't as many apres options, probably just 2 nice restaurants, a few cafés and a Spar, that's all. The slopes are done every night, so they are nicely prepared in the morning, but they're not re-fixed during the day, so if a slopes gets messy, it will stay that way till the end of the day (4pm). Also, the closing time for most lifts is quite early, as it's 4pm.
